These optional, extra study sessions were created with DPI to help ACS CCP(tm) applicants study for the exam.

 

Instructors

Bill Stephenson

Bill Stephenson is Director of Cheese Training at DPI, and he also runs a large Cheese Study Group for ACS CCP applicants before the CCP exam.

Lindsay Slevin

Prior to opening Twin Sisters Creamery in 2015 with her husband Jeff and becoming an artisan cheesemaker, Lindsay spent nine years as a Food Service Director for Brown and Cole Stores, where she was introduced to the wonderful world of cheese. In 2006 Lindsay had the opportunity to work for DPI Specialty Foods as an Account Executive until opening the creamery. While at DPI, Lindsay wrote the inaugural American Cheese Society certification exam and became a Certified Cheese Professional in 2012. That accomplishment and her passion for cheese, combined with Jeff’s support and manufacturing background, motivated them to pursue their dream of owning their own business and opening Twin Sisters Creamery, named after their twin daughter’s Maddy and Lexi.

Twin Sisters Creamery focuses on Raw Milk cheeses using high quality Jersey cow’s milk. We’re proud to be a part of the growing artisan cheesemaking industry in Washington State.

Steve Jones

Steve Jones has been in the artisan cheese industry for over 23 years. He has worked in many aspects of the business including,

• 15 years as a independent shop owner
• 2 years with a importer
• 4 years with a small grocery chain
• 2 years representing small dairies

Steve also co wrote a book “Cheese, Beer, Wine, Cider, 75 perfect pairings” and was the 2011 Cheese Monger Invitational Champ!

Steve has a fine art degree ( that’s why he sells cheese! ) and is a recovering kitchen professional ( line cook, prep cook, pot scrubber...) 

Trevor Thomas

Trevor Thomas is the Manager of Retail Merchandising & Cheese Education at Lactalis American Group, INC. and a current ACS CCP(tm).  Trevor is also the current vice-chair of the ACS Certification Committee.
